Chicken Sausage and White Bean Stew

Wow! This flavor is amazing. I put a little cayenne pepper in my bowl at serving time.

The Ingredients

  • 12-oz package pre-cooked chicken sausage sliced
  • 6 carrots coarsely chopped
  • 1 medium onion, chopped
  • 1 teaspoon table salt
  • 1 teaspoon rosemary
  • 1/2 teaspoon black pepper
  • 2 14 1/2-oz cans fire-roasted diced tomatoes
  • 4 (15.8-oz) cans great Northern beans, drained and rinsed
  • 6-oz frozen cut-leaf spinach
  • 5 bacon slices, cooked and crumbled
  • 12-oz water

The Steps

  • Place carrot and onion in a slow cooker
  • Sprinkle with salt, rosemary, and pepper
  • Layer tomatoes and beans over carrot mixture
  • Top with sausage and water
  • Cover and cook on Low 8 hours or until vegetables are tender
  • Stir in spinach and bacon and cook 10 minutes
